How can I acquire the title to a motorcycle that has been left in my shop?

I had a customer drop off a motorcycle a little over a year ago to get some work done. I require a deposit before starting any work. The guy said he would bring in a deposit later on in the week. That was the last time I heard from him. Since then, I've tried to contact him several times without reply. I have not done any work to the bike; its in the same condition as the day that he brought it in. However, the total for his storage is over $3,000. So my question is, can I get the title for the bike in lieu of payment?
